Metall humit

No es pot cuinar sense haber de netejar. Quan el darrer plat surt de la cuina cap al menjador es el moment de treure's el devantal i respirar a fons. A vegades em trobo coses boniques i les puc capturar per ensenyar-vos-les.

You cannot cook without having to clean. When the last plate leaves the kitchen to the dinning hall the time comes to take out the apron and take a deep breath. Sometimes I find beautiful things and I can capture them and show them to you.

La collita

Cada dimarts i divendres al matí es duu a terme la collita. Per grups anem als nostres camps i recollim tomàquets, enciams o naps segons la temporada. Omplim cistells i contenidors, pesem les verdures i les repartim entre la cuina i les que s'oferiran als consumidors per vendre.

Després a la cuina toca rentar les verdures, guardar-les en bosses i posar-les a la nevera. Algunes les deixem "a la fresca", com les patates, cebes, pastanages, naps i raves, chayote, ceba tendra i col xinesa. Aquí costa llançar coses a la brossa. Domina el concepte de "mottainai" (no malgastar, deixar perdre, en anglès "not to be wasteful"). Aprofitem les fulles de la pastanaga i en fem tempura, couem les llavors de la carabassa, mentre que saltem les fulles del nap i les reguem amb salsa de soja.

Aquestes fotogràfies varen ser fetes al setembre, quan teniem encara una bona temperatura i encara podia fer gazpacho. Ara els cistells són molt més plens de verdures de fulla, diferents tons de verd i alguna pastanaga.

Every tuesday and friday morning takes place the harvest. We go to our fields with our groups and collect tomatoes, lettuce or raddish depending on the season. We fill containers and baskets, scale the vegetables and divide them between the kitchen and the consumers.

Then after, in the kitchen we must clean the vegetables, put them into plastic bags and store them in the refrigerator. Some can be left outside, like potatoes, onions, carrots, raddishes and turnips, chayotes, steam onions and chinese cabbage. Here it is difficult to through things away. The concept of "mottainai" (not to be wasteful) flow all over the place. We use carrot leaves to make tempura, bake pumpkin seeds and stir fry raddish leaves with soy sauce.

This pictures were taken on September, when we still had good weather and I could still cook gazpacho. Today the baskets are full with leafy vegetables, diferent shades of green and some carrots.

Embrutant-me les mans

Les meves mans són la meva eina principal a ARI. No s'ha de subestimar el poder corrosiu de l'aigua ni el de les eines del camp sobre una pell tendra i aviciada com la meva. No patiu, una bona cremeta i uns guants són els meus aliats actualment.

Aquestes són els palmells de les meves mans un dilluns de setembre abans de la posta de sol. Fotografia cortesia d'una co-voluntària que em va fer el favor de pulsar el disparador després del FLW amb les gallines.


My hands are my main tool at ARI. You shouldn't underestimate the corrosive power of water or field tools on a tender and spoiled like mine. Don't worry, a good hand cream and some gloves are my best friends right now.

Pluges mil

Mil disculpes. Per mil raons no he pogut actualitzar aquest blog com Déu mana. La veritat és que m'he concentrat a viure el dia a dia, ajudar al màxim, fer fotos i aprendre. Per compensar-vos, vull penjar unes quantes fotos tirades durant els darrers mesos.

Al agost va fer un temps de pena. Va ploure gairebé cada día. Això vol dir que la roba no es secaba, anavem tot el dia amb l'impermeable posat mirant el cel a l'espera d'un ruixat. Aquí la imatge:

During august the weather was terrible. It rained nearly every day. This meant that clothes were not drying, we were wearing raincoats all day long while looking at the sky waiting for more drops to pour. Here's the image.

Fent el pagès

A vegades tinc el plaer d'anar al camp a tirar fotos i fer una mica el pagès. El dia que vaig tirar aquesta foto estàvem recollint patates i preparant la terra per les pastanagues. Els meus coneixements d'agricultura són nuls, per això cada vegada que surto al camp es una nova aentura. Per cert, els contenedors de colors acaben recollint els vegetals que després em toca rentar i emmagatzemar a la cuina.

Sometimes I have the pleasure to join the people who work in crops and vegetables. The day I took this picture we were harvesting potatoes and preparing the soild for carrot sowing. My knowledge of farming is really poor, that's why every time at the field is an adventure. By the way, the colorful containers always end behing the kitchen, where I must wash and store them.

Omeretsu

Cada nova experiència té els seus reptes. Però n'hi ha alguns que es repeteixen. He fet unes quantes truites des que vaig començar a voltar. Puc dir que les primeres no van ser un desastre gràcies a altres espanyols que en sabien més que jo. He intentat fer truites decents a la República Txeca, Polonia, Japó, Alemanya i Austria, que jo recordi. I aquesta, senyores i senyors, es la millor. En realitat varen ser set truites, sis per cada una de les taules més una de regal. Vaig patir però va valer la pena. I la propera vegada, paella?



Each new experience has its challenges. But there are some which always come back. I have done a few omelettes since I started traveling. I can say that the first ones were not a disaster thanks to other spanish who knew much more than me. I have tried to cook spanish tortilla in the Czeck Republic, Poland, Japan, Germany and Japan. And this, ladies and gentlemen, is the best one. Well, actualy I cooked seven omelettes, one for each of the six tables and an extra one. It was worth it. What's next, paella?

Una de les gràcies de viure en una granja es la quantitat de bitxos de tota classe amb qui comparteixes l'espai. No penseu tampoc que hi ha porcs i vaques passejant pel campus, però si que hi ha un parell de gats que ronden la cuina, mosquits a "tutti-plen", mini granotes al lavabo i algún que altre insecte que no anomenaré per si de cas.

Aquesta foto la vaig fer un diumenge al matí abans d'anar a esmorzar. Com que la meva habitació es al primer pis normalment faig servir la porta de baix. Les botes es deixen a fora perque es ventilin i per no importar l'ambient del estable o el corral al dormirtori.
